Summary Program: Registered Dietitians (RDs) can play an indispensable role in addressing both food insecurity and nutrition-related health issues within the Hispanic community by utilizing a culturally sensitive approach to food choices and intake, comprehensive nutrition education, and expert medical nutrition therapy to enhance the nutritional and overall health status of the constituents of this population. The Spanish Emphasis curriculum option within Marywood University’s DPD program was created to educate nutrition and dietetic students to become culturally competent RDs to better serve the Hispanic population. Students who graduate from this curriculum option will also earn a minor in Spanish and will complete a 9-12 week immersion experience in the Spanish-speaking, Latin American country of Costa Rica during the second semester of their senior year. Eligibility: As a curriculum option within the accredited DPD, students must meet the requirements of that program to be eligible for acceptance into the program and to maintain their eligibility for this curriculum option. Study Abroad Details: While in Costa Rica, students will study Spanish at CPI (Centro Panamericano Idiomas Immersion school- www.cpi-edu.com/index.html) and will earn University credits through the New Mexico State University (NMSU) "Language Credit via Distance Education" program. These credits will be transferred to Marywood University and will fulfill the requirements for a Spanish minor. Students must complete NMSU’s Distance Education Intensive Language (DEIL) application (http://studyabroad.nmsu.edu/), CPI’s registration form (http://www.cpi-edu.com/application.htm) as well as Marywood University's Study Abroad application prior to the study abroad experience. CPI will arrange home stay accommodations for each student which includes breakfast and dinner meals daily. CPI has 3 campuses: Heredia, Monteverde, and Flamingo Beach. It is expected that students will be able to study at each of these campuses while in Costa Rica. Students will be responsible for room, board and travel accommodations.
